Everything is Getting Bigger!

With our recent rain everything seems to be doubling in size overnight.

I'm excited about how quickly my pak choi is growing. From what I've read they take 30 to 40 days to mature. Doing a quick search on Greenthumbr I can see that I "planted" them in my Front Herb and Veggie Garden about 29 Days ago. I'm guessing they were at least two weeks old when I bought them...so its looking like they've possibly reached maturity.

From what I've read, there is no specific size they get when they are "ready to harvest." I'm guessing you more or less feel it out. I could harvest one now and they'd probably taste sweet. Or I can gamble with letting them get bigger. Its real important to catch them before they flower, because thats when they become tougher and the flavor isn't that good. I'm going to ask Aaron's opinion before I chop one down but we might just be having pak choi for dinner tonight! I love growing veggies.

As for other edible things that seem to making leaps in size. Our aparagus is growing like there is now tomorrow:

Unfortunately we keep forgetting to harvest it. I harvested the above stalk but only the top of it was usable. They rest had turned tough. Our other plant had some more slender stalks, even though they were tall they tasted pretty good.

Our Strawberries are also loving this weather:

My bed desperately needs be weeded, but I have a hard time weeding this patch without disturbing the strawberry plants. Its also exciting to see little strawberry fruits appear all over the place:

The past couple years our strawberries have been really tasty. Hopefully this years batch will taste just as good!

A few non-fruit/veggie things that seem to be exploding are my yarrow:

Which already has flower heads all over:

...and this plant in my mailbox garden:

The above might be tickseed? I honestly forget. And I might have to move it too. I think the soil its in is too good for it if you can imagine that. Because of that it seems to be growing more leaves than flowers. If I put it in poorer soil - which we have plenty of - i should see more flowers.

I love this time of year, when everything gets so big so fast. It really is a treat to have everything you planted come back to life.
