    Congrats on the beets! Thats great! Have you already decided what you are going to do with all of them? <br/><br/>I think we primarily juiced ours 'cause Aaron doesn't liked cooked beets. We also go back and forth on using the greens. Some sources say they are really good for you and others say they inhibit calcium intake. <br/><br/>As for varieties my last successful harvest was a bunch of candy striped beets. They are stunning when cut open if you pick them at the right time. I'll have to find those pictures.<br/><br/>Hope you enjoy all those beets! <br/><br/>

    I'm definitely going to juice some of them.  I've never had beet juice, actually.  What's a good combination?  Apple?  carrot?  <br/><br/>I have a recipe called Autumn Latkes that sounds pretty awesome. It's a variation of potato latkes that uses carrots, sweet potatoes, and beets out of _Veganonicon_.  I usually throw the greens into my stirfries.  My go-to nutrition book says that they are oxylate-type greens, like spinach, bok choy, and chard, so they aren't good sources of calcium or iron, but they are good sources of folate, K, and fiber so I say go for it!  <br/><br/>I got some of those chiogga beets in my CSA box this winter.  I made a stunning raw kale and beet salad with them!

    I really like beet juice but I also really like beets. Yes, apple and carrots make a good addition. If you wanted something more savory you might try celery instead of apple. I also rarely make a juice without ginger.<br/><br/>Oh I have that book and really like it! I'll have to give those latkes a try. <br/><br/>Thanks for the nutrition info! Out of curiosity, what book are you using? We have cookbooks galore but could use some more health/nutrition books.

    _Becoming Vegan_ is the most comprehensive nutrition book written for the masses that I have ever seen, vegan or no.  It has tables and tables of nutrition information, all easy to page through.  Really dense, not a good bedtime book!
